Bar-S Smoked Sausage Kabobs

INGREDIENTS:

  • 16 oz. package Bar-S Smoked Sausage, (cut into 1 inch chunks)
  • 2 ears of corn
  • 2 medium summer squash
  • 1 medium red onion, (cut into eight wedges, separate each wedge in half)
  • 1/2 red bell pepper, (cut into chunks)
  • 1/2 green pepper, (cut into chunks)
  • 8 medium mushrooms
  • 8 cherry tomatoes


    HERB BUTTER:

  • 2 tablespoons butter
  • 1/2 teaspoon leaf basil
  • 1/4 teaspoon leaf oregano
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese

PREPARATION

  1. Prepare grill so coals are medium. Microwave ears of corn in husks for 8 minutes.
  2. Remove husks and silk, trim and cut each ear into 1-inch sections.
  3. Pierce squash with fork tines, microwave for 6 minutes.
  4. Cut each squash into four wedges. Arrange sausage and vegetables on skewers.
  5. Place skewers on grill; brush with Herb Butter Basting Sauce. Grill 15 minutes, turning and brushing occasionally with sauce.
  6. HERB BUTTER:

  7. Combine butter, basil, oregano, onion powder and garlic powder in a 1-cup glass measure.
  8. Microwave on HIGH for 45 seconds or until butter is melted.
