Mexican Dogs
Makes 6 servings
INGREDIENTS:
6 Bar-S Beef Jumbo Jumbos Franks
6 poppy seed buns
2 cups shredded cheddar cheese
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
1 can (16 oz.) black beans, drained/rinsed
1 can (16 oz.) yellow corn, drained
3 large jalapeño peppers, sliced
Handful of fresh cilantro leaves
PREPARATION:
Grill the franks for 8-10 minutes on medium-high heat, rotating every few minutes
Remove the franks from the grill and place them in the buns.
Sprinkle the cheese, bell peppers, corn, and black beans on top.
Garnish with a few jalapeño slices and cilantro leaves.
Serve with a side of sour cream and guacamole.
