Smoked Sausage Penne Pasta |

Makes 6 servings (1 cup per serving)
INGREDIENTS:
- 1 Bar-S Smoked Sausage Loop (13 oz.)
- 1 box (16 oz.) penne pasta
- 1 large broccoli bunch, chopped
- 1 pint cherry tomatoes, chopped in half
- 4 tbsp. extra virgin olive oil
- 3 shallots, minced
- 1 cup shredded parmesan cheese (optional)
- 1 tbsp. black pepper

PREPARATION:
- Bring a large saucepan full of water to a boil; add the penne pasta.
- Cook the pasta for 7-8 minutes on medium heat or until tender. Drain, then set aside.
- Combine the olive oil, shallots, smoked sausage, and black pepper into a large pot.
- Sauté for 8-10 minutes on medium-high heat, stirring frequently.
- Add the broccoli, tomatoes, and pasta; cook on medium heat for another 3-5 minutes then remove from heat.
- Serve warm with a topping of shredded Parmesan cheese and your favorite Italian dressing.
