Smoked Sausage Penne Pasta

Makes 6 servings (1 cup per serving)

INGREDIENTS:

  • 1 Bar-S Smoked Sausage Loop (13 oz.)
  • 1 box (16 oz.) penne pasta
  • 1 large broccoli bunch, chopped
  • 1 pint cherry tomatoes, chopped in half
  • 4 tbsp. extra virgin olive oil
  • 3 shallots, minced
  • 1 cup shredded parmesan cheese (optional)
  • 1 tbsp. black pepper

PREPARATION:

  1. Bring a large saucepan full of water to a boil; add the penne pasta.
  2. Cook the pasta for 7-8 minutes on medium heat or until tender. Drain, then set aside.
  3. Combine the olive oil, shallots, smoked sausage, and black pepper into a large pot.
  4. Sauté for 8-10 minutes on medium-high heat, stirring frequently.
  5. Add the broccoli, tomatoes, and pasta; cook on medium heat for another 3-5 minutes then remove from heat.
  6. Serve warm with a topping of shredded Parmesan cheese and your favorite Italian dressing.
